Bacon Cheddar Loaded Hassleback Potatoes
I am eating these bacon cheddar loaded hassleback potatoes right now, and they are, in one word: Amazing. Seriously, I just asked my husband to taste test one and he said they’re the best baked potato he’s ever had. So forget any other potato side dish you had planned for this week and made these instead!

This is a great recipe to make with some little hands but an adult should probably do the cutting first. After washing your potatoes slowly cut them thinly taking care not to slice through the entire potato.
Pro Tip: place skewers or toothpicks on either side of the potato to keep your knife from going all the way through.
Once the potatoes are sliced, drizzle with olive oil, sprinkle with salt and pepper and let them bake. While baking you can slice your cheese and crumble the bacon. (Or if you are looking to save time, which I frequently am, you can cheat and buy pre-made bacon crumbles).
After baking for 40-45 minutes, pull potatoes from the oven and allow to cool slightly. Then stuff with cheese and bacon. I also drizzled a small amount of spicy brown mustard on my potatoes to amp up the flavor. Then return the bacon cheddar loaded hassleback potatoes to the oven for 15 minutes.
Finish by smothering in your favorite baked potato toppings. I used onions, chives, and sour cream.

Bacon Cheddar Loaded Hassleback Potatoes
Ingredients
- 3 medium potatoes
- 1 tbsp olive oil
- salt and pepper to taste
- 8 oz chunk sharp cheddar cheese
- 1/2 cup bacon bits or crumbles equivalent to 3 cooked strips
- 1 tsp spicy brown mustard optional
- chives or green onions optional topping
- sour cream optional topping
Instructions

Preheat oven to 375 degrees F. Wash potatoes and slice thinly, making sure not to cut all the way through the potato.

Drizzle with olive oil and sprinkle with salt and pepper. Place potatoes in the oven. Bake for 45 minutes until tender.

Let potatoes cool slightly. Stuff with sliced cheddar and bacon bits. Return to oven for 15 minutes until the cheese has melted.

Remove potatoes and top with desired toppings. Enjoy!
