Easy dinner tonight: Slow Cooker Chipotle Apple Pork Loin
Want an easy, healthy, weeknight meal that will cook itself while you are at work? Well look no further. This slow cooker chipotle apple pork loin is smokey, sweet, tender perfection. And possibly one of the most versatile dinner options on the planet.
It’s the week before Thanksgiving.
I know, that sentence sends me into a panic too. Not just because our holiday season typically looks like a season of The Amazing Race, but because from here until the new year we have something going Every. Single. Weekend.
We typically celebrate Thanksgiving twice. Once the Sunday before with my extended family, and then on Thanksgiving day with my husband’s immediate family. This year I am helping my mom host about 20 people for dinner. Which means I am baking two pies, a sweet potato casserole, and an appetizer; then more food next weekend as well.
Needless to say I need easy meals like this Slow Cooker Chipotle Apple Pork Roast to get me through the week.

This was soooo simple to make, but still had complex and bold flavors. I love working with pork loin because it is a very versatile meat.
We shredded the roast to make pork tacos with traditional taco toppings, but I also think this meat would work well over mashed or roasted potatoes, as a filling for burritos or an omelette, or even just on it’s own.
Pork loin keeps really well in the freezer, so I typically buy several when they go on sale, freeze them, and then thaw when needed. You could use a Pork Butt Roast for this recipe as well (which confusingly enough is actually made from the shoulder of the pig…not the butt). If you do use a butt roast increase your cooking time by an hour to insure that the meat is cooked through.
Simply throw all of the ingredients in a slow cooker and you are set to go! Dinner will be ready by the time you get home from work. In my opinion that is one of the greatest feelings in the world.

Slow Cooker Chipotle Apple Pork Loin Roast
- 1 2-3 lb pork loin roast or pork tenderloin
- 1 medium onion
- 4 chipotle peppers
- 1 small apple I used a gala apple
- 2 tbsp adobo sauce
- 1 1/2 cups apple cider
- salt and pepper to taste
Slice the onion into large chunks and spread on the bottom of the slow cooker crock. Pour 1/2 cup of apple cider over the onions.
Coat the outside of the pork loin with salt and pepper. Lay pork loin over the bed of onions in the slow cooker.
Place chipotle peppers on top of the pork loin, slice apple and place slices around the pork loin in the slow cooker.
Mix adobo sauce in 1 cup of apple cider and then pour over pork loin and onions. Cook on high for 5 hours.
