Easy Slow Cooker Pulled Pork Tacos
With Tangy Peach and Mango Salsa
If you haven’t yet caught on I LOVE Tacos. They are just a great versatile meal that always hits the spots and is so easy to make. But want to know what I love even more than tacos? Easy dinners that can be repurposed throughout the week.
No, I’m not talking about reheating leftovers night after night. I am talking about incredibly tasty and tender pulled pork used for delicious tacos one night and two incredible other meals throughout the week!

In the next few days, I will share two other posts where I will use the leftover pork to create Pulled Pork Topped Homemade Mac and Cheese and then Apple and Pork Stuffed Acorn Squash.
Now to focus on tonight’s recipe: Slow Cooker Pulled Pork Tacos and Sweet Peach and Mango Salsas. This pairing is the BEST. Think slightly spicy, slightly smoking, and slightly sweet. The warm and tender pulled pork gets a fresh bite from the salsa and makes the perfect taco. It’s so easy to make too: just cook the roast while you are at work, assemble the tacos, and you have dinner.
Ingredients For Pulled Pork Tacos
- 5-6lb Pork Roast: If you are looking for suggestions I would go with either a Pork Loin Roast or Pork Butt (actually the shoulder of the pig). This may seem like a huge roast (and it is) but remember I am using it in three different recipes this week!
- Chiptole Peppers in Adobo Sauce
- Can or Bottle of Beer
- Lime Juice
- Spices: Chili powder, onion powder, garlic powder, paprika, cumin, salt and pepper
- Cheese for topping
- Tortillas
- Fresh Peach and Mango Salsa (recipe below)
How To Make Pulled Pork Tacos
Start by slicing the pork roast into 5-6 large pieces. This will ensure that the pork cooks completely and evenly in the slow cooker. Next mix together the spices in a small bowl, then rub the mixture over all sides of the pork.
Let the roast cook for either 6 hours on high or 8 hours on low. Once the meat is cooked you can shred the meat and prepare the salsa (chop all the ingredients and combine).
Fill your favorite kind of tortilla with meat, salsa, cheese, and whatever else you love in tacos. Easy delicious dinner!
Easy Slow Cooker Pulled Pork Tacos
Smoking, slightly spicy, and cooks while you are at work! What more could you want in a weeknight meal? Pulled pork tacos are delicious and so easy to make.
Ingredients
- 5-6 lb pork roast pork butt, or roast or loin works well
- 1 tsp sea salt
- 1 tsp pepper
- 1/2 tbsp garlic powder
- 1/2 tbsp onion powder
- 1 tbsp chili powder
- 1/2 tbsp paprika
- 1 tbsp cumin
- 2 tbsp adobo sauce
- 3 chipotle chilis, diced
- 1/3 cup lime juice
- 1 bottle beer
Serve Pulled Pork With
- tortillas
- cheddar cheese
- sour cream
Instructions

Prepare the pork by cutting it into 5-6 large chunks.

Mix spices and then rub on the pork roast cuts. Add roast to the slow cooker.

Add chipotle peppers, adobo sauce, lime juice, and beer to the crockpot.

Cook on high for 6 hours or low for 8 hours. Shred the cooked pork and serve with your favorite taco toppings. (Or try out my peach mango salsa!)
Peach Mango Salsa
Ingredients
- 3 peaches
- 1 mango
- 2 avocados
- 1/3 cup fresh chopped cilantro
- 1/2 small red onion
- 1/3 cup lime juice
- 1/2 tsp salt
Instructions

Finely chop all ingredients and mix well. Serve cold.
What to do with the leftovers?
