As promised here is my absolute favorite fall drink. Carmel Apple Spiced Cider. The perfect combo of appley (not a word but who cares) sweetness, smooth carmel, and completely clean eating or Whole30 compliant! I love the Starbucks Carmel Apple Spice. It’s warm and just tastes like harvest time to me.

What I don’t love is the mother load of sugar and calories packed into this fall drink. So I made my own.  This Carmel Apple Spiced Cider doesn’t have any added refined sugar or sweeteners and it still hits the spot.

Now I know what you are thinking. How in the world to you get a carmel apple like drink without sugar? Well the answer is that you don’t use carmel. Instead I used full fat coconut milk cooked down to form a syrup and sweetened with none other than apple cider and vanilla extract. Granted this isn’t the same thing as carmel sauce, but trust me you won’t miss the sugary stuff in this drink.

To start you will need to make the coconut carmel creamer.

How to make coconut creamer for carmel apple spiced cider.

First start with one can of full fat coconut milk. Cook this at medium heat over the stove top until the milk reduces down. It should be a consistency between coffee creamer and syrup, this takes about 15 minutes. Once the syrup has cooked town add 3 tablespoons of apple cider and 2 tea spoons of vanilla.

Mix this all well. You will only need a couple tablespoons for the carmel apple spiced cider. Place the rest of creamer in a container in the fridge and save it for future uses!

Now to make Carmel Apple Spiced Cider, simply mix one cup apple cider, a dash of cinnamon, and a few spoonfuls of the creamer. Heat and viola you are ready to enjoy! To heat this up you can of course use the stovetop.  I use my latte maker mention in my post for Whole30 Compliant Cinnamon Roll Latte. Or you can heat and mix the drink with a frother like this one:

So mix up a warm glass of this toasty fall drink and let me know what you think!
