Fiesta Chicken Salad
If you are looking for a new recipe to change up your lunch routine, look no further than this Fiesta Chicken Salad. A clean eating recipe you will actually be excited to each, this chicken salad is packed with crunchy veggies and tender chicken. The Tex-Mex inspired seasonings combine to make one delicious flavor party.

Ingredients you will need:
- Cooked chicken
- Greek Yogurt
- Onion
- Bell Peppers
- Cherry Tomatoes
- Cilantro
- Lime Juice
- Chili Powder
- Cumin
- Garlic Powder
- Salt and Pepper
How to Make Fiesta Chicken Salad
Since the chicken for this recipe is pre-cooked, the only real prep work is to shred the chicken and chop the veggies.
Once everything has been chopped simply mix everything together and store in the refrigerator until its time to serve.
Fiesta Chicken Salad can keep in the fridge for about three to four days after it has been prepared.
Fiesta Chicken Salad
Ingredients
- 2 cups shredded chicken
- 1/2 cup greek yogurt
- 1 diced red bell pepper
- 2 Tbsp diced fresh cilantro
- 1 cup chopped cherry tomatoes
- 1 diced small onion
- 1 tsp lime juice
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp cumin
- sea salt and pepper to taste
Instructions

Dice the onion, tomatoes, and red pepper.

In a medium sized bowl mix the greek yogurt with all of the spices.

Add all other ingredients to the bowl and mix well. Serve cold.
